Job Description

Senior Sous Chef – The Ivy Asia, Glasgow

Leading from the main pass, guide the team through busy services, ensuring every dish reflects the quality, presentation, and high standards that define The Ivy Asia experience.

Responsibilities

  • Assist with wastage, GP & Labour controls.
  • Assist in scheduling, staffing, and performance management of kitchen personnel.
  • Ensure that every dish is prepared and executed to the highest standards.
  • Ensure correct prep levels by the dedicated prep team.
  • Ensure deliveries and stock are put away correctly by the Goods Receiver.
  • Precise ordering to ensure full menu availability and minimum wastage.
  • Lead the team through positive and constructive methods.
  • Daily due diligence.
  • Look after staff wellbeing.
  • Ensure compliance with health and safety regulations.
  • Train and mentor kitchen staff to maintain high food standards.
  • Pioneer a positive work environment and foster teamwork.

Requirements

  • Previous experience as a Senior Sous Chef or similar role in a busy kitchen environment.
  • Strong culinary skills and a passion for quality.
  • Leadership abilities with excellent communication and interpersonal skills.
  • Strong understanding of EBITDA & GP.
  • Understanding PnL’s to make positive cuts increasing overall profit.
  • Ability to thrive in a fast paced, high pressure environment.
  • Experience in leading a large kitchen team.
