About the role

We’re looking for a passionate and experienced Senior Sous Chef to join the award-winning team at Peebles Hydro. If you thrive in a fast-paced, high-quality kitchen environment and are ready to step into a senior leadership role, we’d love to hear from you.

As Senior Sous Chef, you’ll play a key part in leading the kitchen brigade, supporting the Head Chef and delivering consistently exceptional food across our diverse dining outlets. From large-scale events to à la carte dining, you’ll bring creativity, strong organisation and a commitment to quality in everything you do.

What you’ll be doing

  • Supporting the Head Chef in the day-to-day running of the kitchen
  • Leading, motivating, and developing the kitchen team
  • Ensuring the highest standards of food quality, presentation, and consistency
  • Managing stock control, ordering, and cost efficiency
  • Driving menu development and innovation
  • Maintaining strict food safety and hygiene standards
  • Taking responsibility for the kitchen in the Head Chef’s absence

What we’re looking for

  • Proven experience as a Sous Chef or Senior Sous Chef in a high-volume, quality-led environment
  • Strong leadership skills with the ability to inspire and develop a team
  • Excellent organisational and communication skills
  • A passion for fresh, seasonal produce and creative cooking
  • Solid understanding of food safety and HACCP procedures
  • Flexibility to work across a 7-day rota
