Job Description

Your mission:

As Chef de Partie, you’ll play a key role in the day-to-day operation of the kitchen, taking ownership of your section and helping deliver exceptional food and memorable guest experiences.

Working closely with the Sous Chef and Head Chef, you’ll maintain high standards of food quality, presentation, and cleanliness, while supporting the wider team during busy services across our restaurants, bars, and events operations.

This is a hands on role that offers the opportunity to develop your skills within one of Edinburgh’s most exciting hospitality destinations.

The Details: Food Preparation & Service

  • Take ownership of your designated kitchen section, ensuring it is organised, prepared and ready for service.
  • Prepare, cook and present dishes to the highest quality and presentation standards.
  • Support the delivery of food across our Scottish Brasserie, Italian restaurant, breakfast operation, room service and events business.
  • Ensure all dishes are prepared consistently and in line with recipes, specifications and guest expectations.
  • Assist with mise en place and service preparation for busy trading periods.
  • Work closely with the Sous Chefs and Head Chef to ensure smooth service delivery.
  • Help deliver private dining, conferences, weddings and special events as required.
  • Maintain high standards during busy service periods while remaining calm and efficient.

Kitchen Standards & Compliance

  • Follow all food safety, hygiene and HACCP procedures.
  • Ensure your section is consistently clean, organised and compliant with company standards.
  • Monitor stock levels within your section and communicate ordering requirements to senior chefs.
  • Minimise waste and support good food cost management practices.
  • Ensure equipment is used correctly and safely.

Teamwork & Development

  • Work collaboratively with chefs and kitchen porters to deliver exceptional guest experiences.
  • Support and encourage Commis Chefs and apprentices within the kitchen team.
  • Take an active role in learning new skills, techniques and menu items.
  • Contribute ideas for improving dishes, processes and guest satisfaction.
  • Build positive working relationships with both kitchen and front-of house teams.
  • Demonstrate a positive attitude, strong work ethic and willingness to learn.

As Sous Chef, you will play a key role in supporting the Head Chef and leading by example across multiple outlets, helping deliver culinary excellence throughout one of Edinburgh’s most exciting hospitality destinations.

Experience What we are looking for

  • The right to work in the UK.
  • A recognised professional cookery qualification.
  • Previous experience as a Chef de Partie, Demi Chef de Partie or strong Commis Chef ready for the next step.
  • Experience working in a quality driven restaurant, hotel or hospitality environment.
  • Passion for cooking with fresh, seasonal ingredients.
  • Strong attention to detail and pride in food presentation.
  • Good knowledge of food safety and kitchen hygiene standards.
  • Ability to work effectively as part of a team.
  • A positive attitude and willingness to learn and develop.
  • Excellent organisational and communication skills.
  • Flexibility to work evenings, weekends and peak trading periods as required.
